Quiche with Black Forest ham and Roquefort

Ingredients for 1 servings:

  • 200 g wheat flour type 550
  • 100 g butter
  • 1 pinch of salt
  • 1 m.-sized egg(s)
  • 200 g crème fraîche
  • 2 m.-sized eggs
  • 1 pinch(s) of pepper
  • 100 g Black Forest ham
  • 100 g Roquefort

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours

from a 26cm quiche dish

Knead the dough ingredients into a smooth dough, wrap in cling film, and let rest in the refrigerator for at least an hour. Preheat the oven to 200°C (top/bottom heat). Grease a 26cm quiche dish and line it with the dough. Prick the bottom several times with a fork. Pre-baking is not necessary. For the topping, mix the crème fraîche, eggs, and pepper well and pour over the dough. Finely dice the ham, tear apart the Roquefort, and spread both evenly over the egg mixture. Bake the quiche on the middle rack for 30 minutes. I recommend serving it with a bowl of leaf salad.
