Zucchini gratin with feta cheese

Ingredients for 2 servings:

  • 500 g zucchini
  • 2 garlic cloves
  • 150 g sheep’s cheese
  • 3 tbsp olive oil
  • 4 stalks of thyme
  • 1 can of tomatoes, chopped
  • 200 ml red wine
  • ½ tsp cinnamon
  • Seasoned salt
  • Cayenne pepper

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Preheat oven to 200 degrees Celsius. Clean the zucchini and cut into thin slices. Peel and finely dice the garlic. Cut the feta cheese into small cubes. Heat the olive oil. Sauté the garlic and thyme in it. Deglaze with the chopped tomatoes and red wine. Season the sauce with cinnamon, salt, and cayenne pepper. Simmer for about 5 minutes. Cover the bottom of the baking dish with tomato sauce. Layer the zucchini in a shingle-like layer. Season with salt and cayenne pepper. Pour the remaining tomato sauce over the top and sprinkle with feta cheese. Bake in the hot oven on the oven rack on the middle shelf for about 25 minutes. Serve with flatbread, for example.
