Ingredients for 1 servings:

  • 250 g flour
  • 150 g butter
  • 125 g sugar (Basterdsuiker, from the Netherlands) or simply sugar
  • 1 egg(s)
  • 1 pinch of salt
  • some lemon peel
  • 1 packet of vanilla pudding powder
  • Cinnamon
  • Sugar (Basterdsuiker) or powdered sugar
  • 1 kg apples

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Apple cake

Knead the flour, butter, sugar, egg, lemon zest, and salt with a mixer for at least 10 minutes. Grease a round baking pan and line it with two-thirds of the dough, filling it up the edges. For the filling, mix one packet of vanilla pudding with cinnamon and sugar to taste. Peel and quarter the apples and remove the cores. Slice the quarters. Sprinkle the base with a mixture of (raw) sugar, cinnamon, and pudding powder. Then arrange several layers of apple slices and sprinkle each layer with the sugar and cinnamon pudding mixture. Place the remaining dough on top of the last apple layer to form a lattice. Bake the cake in a preheated oven at 175°C (top/bottom heat) for 50 to 60 minutes.
