Ingredients for 1 servings:

  • 125 g soy yogurt (yogurt alternative), natural
  • 40 g oil, neutral, corresponds to 40 ml
  • 1 shot of milk (plant-based)
  • 1 pinch of salt
  • 40 g sugar
  • 1 packet of vanilla sugar
  • 250 g flour
  • ½ pack of baking powder
  • 50 g butter, vegan (Alsan)
  • 40 g sugar
  • 100 g flour
  • 1 pinch of salt
  • ½ tsp cinnamon
  • 2 tbsp hazelnuts, ground
  • 200 ml milk (plant-based)
  • ½ package vanilla pudding powder (bourbon)
  • 15 g sugar
  • 2 small apples
  • 2 handfuls of walnuts (halves)

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

from “quark”-oil dough for a small springform pan

First, prepare the filling. Bring most of the plant-based milk to a boil in a small saucepan, then mix the remaining pudding mix and sugar into the boiling liquid. Bring to a boil while stirring until the mixture thickens. Remove from the heat and place a cut-open freezer bag directly on the surface to prevent a skin from forming. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit), grease the pan, and crumble it into crumbs. In a small bowl, knead the crumb topping from the listed ingredients. For the dough, first put the wet ingredients in a bowl, then the salt and sugar. Finally, add the flour and then the baking powder directly onto the flour. Knead vigorously. If the dough is very sticky and won’t come off your hands at all, add another spoonful of flour. Roll out the dough so that it just barely fits the pan, press it in gently, and trim off the edges. This way, you can simply place the cut-out circle in the pan and roll the scraps into a thin sausage and attach it to the edge. Spread the pudding over the dough. Peel and core the apples, then cut them into small pieces and place them on top of the pudding. Crumble a handful of walnut halves over the pudding dish and spread them evenly. Next, add the crumble topping to the cake, followed by another layer of crumbled walnuts. Bake in the oven for about 40 minutes using top and bottom heat.
