Ingredients for 1 servings:
- 150 g vegetable margarine
- 100 g sugar
- 250 g flour
- ½ pack of baking powder
- 20 g applesauce
- 25 g cocoa powder, approx. amount as desired
- 1 pinch of salt
- 900 g apples
- 1 packet of vanilla pudding powder
- 50 g sugar
- 250 ml Soy Cream Cuisine
- 250 ml soy milk (soy drink), vanilla flavor
- n. B. almond flakes
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes
Mix margarine, sugar, flour, baking powder, applesauce, cocoa powder, and salt into a smooth batter and chill. You can omit the cocoa powder or add just enough to make the batter a rich brown color. Quarter, core, and peel the apples. Then pour the batter into a greased springform pan and top with the apples. Mix the custard powder and sugar with a little soy milk until smooth and no lumps remain. Bring the soy cream and the remaining soy milk to a boil in a saucepan, remove from the heat, stir in the custard powder mix, bring to a boil again briefly, and immediately spread it over the apples. Sprinkle the cake with flaked almonds and bake at 170°C (convection oven) for 60-70 minutes. Delicious hot or cold. Tip: I freeze applesauce in ice cube trays; 20g is roughly one ice cube. For 12 pieces, that’s about 300 kcal per piece.
