Apple cake with cream icing

Ingredients for 1 servings:

  • 150 g flour
  • ½ pack of baking powder
  • 40 g powdered sugar
  • 1 packet of vanilla sugar
  • 175 g low-fat curd cheese
  • 3 tbsp milk
  • 3 tbsp oil (sunflower)
  • 5 apples, depending on size 5-7 pieces
  • lemon juice
  • 100 g sugar
  • ⅛ liter cream
  • 3 eggs

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with light quark shortcrust pastry base, for 12 pieces

Knead the flour, baking powder, powdered sugar, vanilla sugar, quark, milk, and oil into a light shortcrust pastry. Roll out into a springform pan lined with baking paper. Peel and core the apples, cut them into wedges, and drizzle with lemon juice if desired. Then spread them over the pastry. Shake the sugar, eggs, and cream well in a mixing bowl until lightly foamy, then pour over the apples. Bake at 180°C (350°F) for about 60 minutes. This also works well as a traybake; simply double the batch. It also tastes great with pears or other fruit.
