Apple parcels with quick puff pastry

Ingredients for 1 servings:

  • 250 g flour
  • 250 g low-fat quark, drained or layered cheese
  • 1 pinch of salt
  • 1 tbsp vanilla sugar or bourbon vanilla sugar
  • 250 g butter
  • 250 g apples, sour
  • 50 g raisins
  • 75 g sugar
  • 1 pinch of cinnamon
  • some lemon juice
  • 1 egg(s), separated
  • 2 tbsp milk
  • 2 tbsp rum

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Homemade puff pastry – but really quick. Makes about 25 pastries

Pile the flour, quark, salt, and vanilla sugar onto the work surface. Cut the butter into small pieces and add. Chop all the ingredients with a large knife and then knead with your hands until you have a smooth dough. Wrap the dough ball in plastic wrap and chill for 1 hour. Then roll it out on a lightly floured surface to a thickness of 2-3 mm. Cut the rolled out puff pastry into 10 cm squares. Peel and coarsely grate the apples and mix them well in a bowl with the raisins, sugar, cinnamon, rum, and lemon juice. Place 1 teaspoon of filling in the center of each square. Brush the edges with egg white. Fold the dough over the filling to form oblong parcels. Press the edges together firmly. Cut strips of the remaining dough into rounds and decorate them with egg white. Place the parcels on a greased baking sheet. Mix the egg yolk with milk and brush the parcels with it. Bake in a preheated oven at 200° for 25 minutes.
