Almond Chia Cookies

Ingredients for 1 servings:

  • 3 tbsp chia seeds
  • 9 tbsp water
  • 450 g soft dates
  • 300 g almonds
  • 450 g flour, e.g. wholemeal spelt flour
  • 1 packet of baking powder
  • 3 packs of vanilla sugar, alternatively vanilla extract
  • 1 pinch of salt
  • 300 g coconut oil, room temperature
  • 120 almonds

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Mix the chia seeds with the water and let it swell for 15 minutes. Bring a little water to a boil in a saucepan, add the almonds—including those for the garnish—and simmer for 5-10 minutes. Then sieve and peel the almonds. This works best if you place them in a kitchen towel and rub them thoroughly. Reserve the almonds for the garnish separately. Place the dates in a blender and blend until smooth. Grind the almonds for the dough and mix them with the chia seeds, dates, flour, baking powder, vanilla sugar, salt, and coconut oil in a bowl to form a dough. Form the dough into small balls and press an almond into each one. Place the cookies on a baking sheet. Bake in a preheated oven at 180°C (top/bottom heat) for about 15-20 minutes, or until the edges are browned. If peeling almonds is too time-consuming for you, you can, of course, buy them already peeled or ground. The specified amount yields approximately 120 cookies.
