Shortcrust pastry cookies – standard or vegan

Ingredients for 1 servings:

  • 500 g wheat flour type 405
  • 200 g sugar
  • 250 g butter or margarine
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 2 eggs or 6 tbsp applesauce or 1 ripe banana

Instructions

Working time approx. 50 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 12 minutes; Total time approx. 2 hours 2 minutes

Sift the baking powder with the flour. Cut the butter/margarine into pieces. Combine all ingredients and knead until smooth. For a vegan version, use margarine and applesauce or banana as an egg substitute. Chill for 1 hour, e.g., in the basement or for 30 minutes in the refrigerator. Preheat oven to 165°C (convection oven). Roll out the dough, cut out shapes, and bake for about 12 minutes (depending on the thickness of the cookies and oven specifications) until golden brown.
