Chocolate coconut cookies

Ingredients for 1 servings:

  • 300 g flour
  • 1 tsp baking powder
  • 100 g sugar
  • 150 g desiccated coconut
  • 100 g chocolate, vegan
  • 3 tbsp coconut oil
  • 2 tbsp applesauce
  • 30 g chia seeds
  • 60 ml water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Chop the chocolate. Mix the flour with the baking powder. Then add all ingredients to a food processor and mix with the dough hook until a dough forms. Shape the dough into balls, flatten slightly, and place them on a baking sheet lined with parchment paper. Bake the cookies in a preheated oven at 190°C (375°F) for about 15 minutes on the middle rack. Let the cookies cool on the baking sheet, then transfer them to a wire rack to cool completely.
