Savory pancake cake

Ingredients for 4 servings:

  • 200 g flour
  • ½ liter of water
  • ½ tsp salt
  • 4 eggs
  • Oil, for baking
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tbsp oil
  • 300 g minced meat, mixed
  • 600 g tomato(s) (pizza), from the can
  • 250g mozzarella
  • Pepper, white

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Mix flour, salt, and water. Cover and let swell for about 30 minutes. Meanwhile, peel the onion and garlic. Finely dice the onion. Heat the oil. Fry the onion and minced meat until crumbly. Add the pizza tomatoes and crushed garlic. Bring to a boil and simmer uncovered over low heat for 10 minutes. Season the meat sauce with salt and pepper, then set aside. Pat the mozzarella dry and cut into small cubes. Stir the eggs into the pancake batter. Heat 2 tablespoons of oil. Add the batter in batches and cook about 10 thin pancakes one at a time. Add a little more oil to the pan after each pancake. Preheat oven to 175°C (150°C fan/gas mark 2-3). Place a pancake on an ovenproof plate or platter. Spread some of the meat sauce on top and sprinkle with mozzarella. Place another pancake on top. Spread the filling and cheese on top and repeat until all the pancakes and filling are used up. Bake the pancake tower in the hot oven for about 15 minutes. Cut into pieces and serve.
