Chicken and vegetable pan

Ingredients for 4 servings:

  • 4 chicken schnitzels
  • 2 small zucchini or 1 large
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 2 onions, possibly red
  • 2 tbsp tomato paste
  • 4 tbsp soy sauce

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with zucchini

Wash the chicken cutlets and cut into thin strips. Heat a little oil in a pan and fry the chicken strips until golden brown. Remove from the pan and pour soy sauce over them. Season with pepper and salt. Peel the zucchini and cut into thin slices, then cut the slices into smaller pieces. Wash the two bell peppers and cut off the tops. Cut the peppers into small pieces. Peel the onions and slice them into rings. Add the vegetables to the pan and sauté over low heat with a little oil until the water has evaporated. Add the tomato paste. Then brown and add the meat. Cook for about another 5 minutes. Serve hot with some bread.
