Grapes in white wine

Ingredients for 9 servings:

  • 1 kg grapes, green
  • 1 kg grapes, blue
  • 750 ml dry white wine
  • 500 g sugar
  • 1 stalk(s) cinnamon
  • 10 cloves
  • 6 cl brandy or cognac

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 3 days 12 hours; Total time approx. 3 days 13 hours 30 minutes

Wash the grapes, drain, and pluck the berries from the stems. Mix the wine and sugar and pour over the grapes. Cover and let them steep overnight. The next day, separate the liquid from the grapes and fill them into hot, rinsed twist-off jars. Bring the mixture of wine and fruit juice with the broken cinnamon stick and cloves to a boil once, skimming off any excess foam, and then pour over the grapes. Seal the jars and let the berries steep in a cool place (cellar) for 3 days. Drain the liquid, bring to a boil again, and once cooled, pour over the fruit. Carefully pour the brandy or cognac over the grapes (the berries should be covered) – do not stir (!) – and seal the jars immediately. Store the grapes in a cool, dark place (cellar cupboard) and let them steep for at least 4 weeks. Shelf life: 3 months. Serving suggestion: With game dishes, roast turkey, to enhance oxtail ragout and dark gravies, with semi-whipped cream as a dessert, or with sweet pancakes. This recipe can also be prepared with gooseberries. However, the fruits should be underripe. Remove the stems and blossom tips.
