Ingredients for 4 servings:
- 1 kg stewed cucumber(s) or salad cucumbers
- 1 kg Thuringian Mett
- 1 onion(s)
- 2 garlic cloves
- 1 can pizza sauce, approx. 400 g
- 1 can tomatoes, chunky, hot, approx. 400 g
- 1 tbsp tomato paste
- 500 ml vegetable stock
- some oil
- e.g. salt and pepper
- e.g. paprika powder
- 1 cup of crème fraîche, approx. 150 g
- 1 tbsp herb butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
Peel and deseed the cucumbers, and cut into approximately 1 cm pieces. Finely chop the onions and garlic. Fry the minced meat in a pan with oil until crumbly. (Hint: It’s easier using a potato masher.) Once the minced meat has the right color, add the onions, herb butter, and garlic. Simmer a little longer. Then add the tomato paste, salt, pepper, and paprika and mix everything together. Then stir in the cucumbers. Finally, add the chopped tomatoes and vegetable stock. Simmer everything for about 15 minutes. When the cucumbers are soft enough, stir in the crème fraîche and, if desired, thicken with a roux. Serve with rice.
