Premium salmon fillet marinated in white wine vinegar with panko breading

Ingredients for 1 servings:

  • 100 g salmon fillet(s), premium
  • 2 tbsp white wine vinegar
  • 1 tbsp flour
  • 1 m.-sized egg(s)
  • 2 tbsp panko
  • 1 tbsp fish seasoning (fried fish seasoning salt à la Didi), in my recipes
  • 40 g clarified butter

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 40 minutes

Marinate the salmon fillet in 2 tablespoons of white wine vinegar for about 30 minutes. Then rub it with the fish seasoning salt. Beat the egg. Coat the salmon fillet in flour and shake off any excess. Then coat the salmon fillet first in the egg, then in the panko. Heat a pan with the clarified butter and fry the salmon fillet until golden brown on both sides. The fillet is done when it is crispy and crunchy on the outside and still slightly translucent on the inside.
