Chickpea pancakes with salmon and spinach

Ingredients for 2 servings:

  • 40 g chickpea flour
  • 40 g wheat flour
  • 140 ml milk
  • 1 egg(s)
  • 1 pinch of salt
  • 6 servings of frozen leaf spinach, portionable
  • 150 g smoked salmon
  • 1 packet of hollandaise sauce
  • 50 g feta cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Whisk together the flour, egg, milk, and salt in a bowl. Fry the batter in a pan with a little oil on both sides. Top the pancake with salmon, spinach, and feta cheese and roll it up. Then place the roll in the oven at 130°C (convection oven) and bake for about 25 minutes. Meanwhile, prepare the hollandaise sauce according to the package instructions. Serve the pancakes with hollandaise sauce, if desired.
