Pork strips with cucumber, tomatoes and thyme

Ingredients for 3 servings:

  • 300 g pork, shredded
  • 1 small cucumber(s)
  • 4 tomatoes
  • 2 tbsp oil, neutral (e.g. sunflower oil)
  • Salt and pepper, white
  • 1 tsp Thyme, dried, shredded

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, peel, and deseed the cucumber, and cut into 1 cm cubes. Wash the tomatoes, quarter them, and remove the stems. Heat the oil in a large, deep frying pan and sear the meat in the hot fat for 5 minutes, stirring occasionally. Only then season with salt and pepper. Add the cucumber cubes, stir well, and fry for another 3 minutes. Finally, add the tomato quarters and the thyme. Cover and simmer for another 5 minutes to allow the tomatoes to release their juices but not completely cook. Season again with salt and pepper before serving. Serve with white rice.
