Fresh peas with Parma ham and spring onions

Ingredients for 4 servings:

  • 800 g peas, fresh in the pod, shelled
  • 4 slices of Parma ham, cut into small pieces
  • 4 spring onions, small without green, finely chopped
  • 2 garlic cloves, very finely chopped, fresh
  • 2 tbsp butter
  • 50 ml vegetable stock

Working time approx. 20 minutes; Total time approx. 20 minutes

Side dish to meat dishes

Blanch the shelled peas for 3-5 minutes, depending on their thickness, and then plunge them into iced water. Sauté the spring onions in butter over low heat for 5 minutes until translucent. Add the garlic and ham pieces and fry gently for another 2 minutes. Now add the fresh peas and sauté for 1-2 minutes. Then pour in the stock and sauté the peas until al dente, allowing the liquid to reduce. Finally, season with salt and pepper. If out of season, use frozen peas, but thaw them first.
