Turkey strips with dried tomatoes, peppers and spring onions

Ingredients for 5 servings:

  • 1 kg turkey schnitzel
  • 1 small jar of tomatoes, dried in oil
  • 2 large onions
  • 2 large bell peppers, yellow
  • 3 spring onions
  • salt and pepper
  • Paprika powder, sweet
  • Ginger powder
  • 2 pinches of sugar
  • 300 ml water
  • 3 cups of cooking cream
  • Sunflower oil
  • Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and dice the onions. Dice the bell peppers and the sun-dried tomatoes. Halve the turkey cutlets lengthwise and then cut into strips. Slice the spring onions into rings. Heat the sunflower oil in a medium-sized saucepan. Brown the turkey strips, add the onions and diced bell peppers, and fry briefly. Add the sun-dried tomatoes with a little of their own oil, sauté briefly, and then pour in 300 ml of water. Once it starts to simmer, add the cooking cream. Season with salt, pepper, paprika, and ginger. Simmer briefly, then add the spring onions and two pinches of sugar. Grate Parmesan cheese over the top, if desired. Serve with potatoes, pasta, and rice.
