Ingredients for 1 servings:
- 3 banana(s), ripe, approx. 250 g without peel
- 80 g peanut butter
- 2 eggs
- 100 ml milk, in the video rice drink
- 2 tbsp xylitol (sugar substitute)
- 60 g hazelnuts, grated
- 20 g coconut flour
- 2 tsp baking powder
- 45 g chocolate chips (Choco Chips)
- 45 g chopped nuts, here walnuts

Working time approx. 10 minutes; Cooking/baking time approx. 22 minutes; Total time approx. 32 minutes

Preheat the oven to 200°C (top/bottom heat). Line a muffin tin with baking cups. Peel the bananas and mash them in a bowl. Add the eggs, peanut butter, and milk and mix. In a second bowl, combine the hazelnuts, coconut flour, and baking powder. Fold the dry ingredients into the wet ingredients. Fold in the chocolate chips and chopped nuts, reserving some for decorating the muffins. Divide the batter among the muffin tins and decorate with the remaining chocolate chips and chopped nuts. Bake the muffins in the preheated oven at 200°C (top/bottom heat) for 10 minutes, then reduce the temperature to 180°C (top/bottom heat) and bake for another 10-12 minutes until golden brown. Makes 12 servings.
