Ingredients for 2 servings:
- 400 g minced pork
- 2 tsp red curry paste
- some salt and pepper
- 3 tbsp breadcrumbs
- 1 small onion(s), finely chopped
- 2 tbsp lime juice
- 2 tbsp fresh coriander, chopped
- 1 red chili pepper(s), chopped
- 2 tsp palm sugar
- some sunflower oil for frying
- 200 ml yogurt
- 1 jar mango chutney

In a large bowl, combine the minced meat with the curry paste, breadcrumbs, onion, lime juice, coriander, chili pepper, and palm sugar. Season with salt and pepper, and knead thoroughly. Cover and refrigerate for 30 minutes to allow the mixture to set. Then, using a spoon, scoop out the meatballs and form them into small patties. Heat a little oil in a large pan and fry the patties over medium heat on both sides until cooked through (this will vary depending on the thickness). Serve with yogurt and mango chutney.
