Ingredients for 4 servings:

  • 2 kg rib(s) (pared ribs)
  • 1 tbsp soup greens, dried
  • 3 peppercorns
  • 1 bay leaf
  • 1 juniper berry(s)
  • 2 garlic cloves
  • n. B. water
  • 60 g orange juice
  • 70 g honey
  • 60 g vinegar
  • 10 g Worcestershire sauce
  • 60 g jam
  • 60 g tomato paste
  • 125 g tomato ketchup

Instructions

Working time approx. 1 hour; Rest period approx. 1 day; Cooking/baking time approx. 15 minutes; Total time approx. 1 day 1 hour 15 minutes

also suitable for the Thermomix

Cut the spare rib into pieces and trim any fat. Layer them in a pot and simmer with the spices (soup vegetables/peppercorns/bay leaf/juniper berries) and water for 15 minutes. In the meantime, weigh the remaining ingredients in the Thermomix and blend for 10 seconds on speed 8. Or mix the ingredients with a hand blender and blend. Dip the cooked spare ribs into the sauce while still warm and layer them in freezer bags. Marinate in the refrigerator once cooled. Marinate for approximately 24 hours. Grill until crispy.
