Salmon tartar with rösti and horseradish yogurt

Ingredients for 4 servings:

  • 400 g salmon, sushi quality, finely diced
  • 2 spring onions, finely sliced
  • ½ bunch chives, cut into fine rolls
  • 2 tbsp olive oil
  • 2 tbsp lime juice, freshly squeezed
  • Salt
  • pepper
  • Rösti:
  • 1 kg potatoes, freshly grated
  • Salt
  • pepper
  • 200 g Greek yogurt
  • 1 tbsp horseradish, freshly grated
  • Salt
  • pepper
  • 8 quail eggs, boiled for 5 minutes, halved
  • 1 jar caviar (trout caviar), rinsed with seltzer water
  • Olive oil, for frying the Rösti

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

For the tartar, combine all ingredients and let it sit in the refrigerator for at least 1 hour. Repeat with the ingredients for the horseradish yogurt. Heat oil in 2 pans, place 8 rösti pieces in each pan, spread them as thinly as possible, and fry them for 5 minutes per side over medium heat until golden brown. Arrange everything decoratively on plates and garnish with eggs and caviar.
