Recipe developed by our five-year-old son – it really tastes like cinnamon!
Grease and crumble a 30 cm loaf pan. Preheat oven to 180°C (top/bottom heat). Mix all ingredients together one at a time. Pour into the loaf pan and level the surface. Bake for approximately 40 minutes, depending on your oven. It’s best to do a skewer test after 40 minutes and bake a little longer if necessary. If the surface becomes too dark, cover the pan with aluminum foil. Let it cool slightly in the pan, turn it out, and let it cool completely. Mix together the powdered sugar, cinnamon, and water or lemon juice (depending on your taste; either tastes good) and spread it over the cake. Perhaps decorate with a few small cinnamon stars; it looks fun. Our little one invented this recipe himself because every other recipe he’d always thought lacked cinnamon. It’s a little spicy, but contrary to his expectations, the kindergarten children practically devoured this cake. Note on the amounts of cinnamon mentioned in the comments: Xandi uses the amount stated here, but if you like, you can use more or less.
