Nettle Chicken Curry

Ingredients for 2 servings:

  • 1 large chicken breast fillet(s)
  • 250 g nettles (nettle tips)
  • 1 shallot(s)
  • 2 tbsp oil
  • 1 tbsp curry paste, green
  • 1 garlic clove(s), finely chopped
  • some soy sauce
  • some fish sauce
  • salt and pepper
  • Water
  • possibly yogurt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the chicken breasts into bite-sized pieces or strips. Mix the curry paste with the olive oil, salt, pepper, and the finely chopped garlic clove. The spiciness should be adjusted to your liking. 1 tablespoon of curry paste for this amount of chicken is a moderately hot dish. Marinate the chicken for 2 hours, stirring a few times if necessary. Caution: Wear gloves when handling and picking the nettles! Clean and wash the nettles, let them wilt like spinach in a separate pot, and roughly chop them. Fry the chicken pieces in a hot pan, stirring constantly. Caution: The marinade burns easily. Add a little water if necessary. Mix the nettles with the chicken pieces, adding more salt if necessary. If you don’t like it too spicy, stir in a cup of natural yogurt. Be careful not to let it boil. The yogurt can also be served separately with a pinch of salt. Serve with basmati rice or noodles.
