Wok noodles with vegetables and coconut milk

Ingredients for 3 servings:

  • 2 cloves garlic
  • ½ onion(s)
  • 2 Pepper
  • some oil
  • 1 small cauliflower
  • 1 small broccoli
  • 2 spring onions
  • 400 ml coconut milk
  • 125 g noodles (stir-fry noodles)
  • 1 ginger, fresh
  • some sambal oelek
  • some soy sauce
  • ½ can/n sprouts (mung bean sprouts)
  • 1 pack of sugar snap peas
  • 1 bell pepper(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the vegetables. Meanwhile, heat the oil in a wok, add the peppers, garlic cloves, and onion, deglaze with coconut milk, add half a pack of stir-fry noodles, and wait until the noodles have absorbed the liquid. Then add the remaining vegetables and simmer for a while. Finally, season with grated ginger, sambal oelek, and soy sauce.
