Zucchini and minced meat stew

Ingredients for 5 servings:

  • 1 can of corn
  • 4 onions
  • 2 cloves garlic
  • 300 g zucchini
  • 400 g tomatoes
  • 1 bunch of chives
  • 4 tbsp oil
  • 500 g minced meat (beef)
  • 2 tbsp tomato paste
  • salt and pepper
  • 500 ml vegetable broth, instant
  • 2 tbsp crème fraîche
  • Cayenne pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Drain the corn. Peel the onions and garlic, thinly slice the onions and garlic into leaves. Wash and chop the oregano. Wash and trim the zucchini, and cut into slices about 1/2 cm thick. Blanch the tomatoes, peel, quarter, and deseed them. Wash the chives, shake dry, and cut into rolls. Sauté the onions, garlic, and oregano in a pan in 3 tablespoons of oil, add the ground beef, and fry until crumbly. Stir in the tomato paste. Season the ground beef with salt, pepper, and cayenne pepper. Pour in the stock. Simmer everything for 5 minutes. Fry the zucchini in the remaining oil until al dente. Add the tomatoes to the beef and simmer for about 2 minutes. Season with cayenne pepper. Fold in the zucchini. Serve the ground beef sprinkled with a dollop of crème fraîche and chives.
