Ingredients for 1 servings:
- 400 g apples (green variety)
- 600 g melon(s) (honeydew melon)
- 2 lemons, (juice)
- 1 bunch lemon balm
- 500 g gelling sugar, 1+1
Instructions

Halve the melon and scoop out the seeds with a spoon. Place the seeds in a fine sieve and strain the adhering flesh into a bowl. Remove the remaining flesh from the skin, dice it, and add it to the bowl. Peel the apples, cut into small pieces, and immediately drizzle with lemon juice to prevent them from browning. Bring to a boil with the melon cubes and preserving sugar, then simmer for another 5 minutes, stirring. Rinse the lemon balm, pick off the leaves, add them, and bring to a boil while stirring. Pour into jars while hot. Tip: If you like, you can flavor the sauce with gin. Fruit sauces are delicious all year round. It’s best to freeze them in small portions.
