Ingredients for 4 servings:

  • 250 g beans, green
  • 1 small jar of white beans
  • 2 sprigs of thyme, chopped
  • 1 sprig(s) rosemary, chopped
  • 1 sprig(s) savory, chopped
  • 1 tbsp parsley, flat
  • 1 tbsp basil
  • 1 onion(s), diced
  • 1 garlic clove(s), diced
  • 2 tbsp oil
  • 4 sausages, fresh, coarse
  • 1 small can of tomato paste
  • 200 ml red wine
  • 500 ml vegetable stock
  • Salt
  • Cayenne pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

with green and white beans

Cook the trimmed green beans until al dente. Place the white beans in a colander and rinse thoroughly. Heat the oil in a pan and fry the sausages until hot, but not cooked through. In a pot, sauté the onion, garlic, thyme, rosemary, and savory in a little oil. Add the tomato paste and fry. Pour in the red wine and reduce by about 2/3. Pour in the stock, bring to a boil, and simmer briefly. Slice the sausage and add it. After about 1 minute, add the beans. Season with salt, cayenne pepper, and sugar, and simmer for another 5 minutes. Serve sprinkled with chopped parsley and basil.
