Ingredients for 4 servings:
- 1 kg potatoes (quartered but unpeeled)
- 75 g butter
- 1 tbsp coarse-grained mustard
- 3 tsp mustard, medium hot
- 1 clove(s) garlic, (crushed)
- 1 bunch parsley, large
- 1 dashes olive oil
- Sea salt
- pepper
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Drain the cooked potatoes and return them to the pot to steam. Peel the potatoes, then mash them. Mix in the butter, mustards, and garlic, season with salt and pepper, and continue mixing. Season with more mustard, add the parsley and a dash of olive oil, and stir.
