Cinnamon roll cake with frosting

Ingredients for 1 servings:

  • 500 g flour
  • 250 ml milk, 1.5% or 3.5% fat
  • 42 g fresh yeast or 2 sachets of dry yeast
  • 80 g sugar
  • 1 egg(s)
  • 60 g butter or margarine
  • 1 tsp, leveled salt
  • Fat for the mold
  • 60 g butter, liquid
  • 1 tbsp cinnamon, or more
  • 60 g brown sugar
  • 2 tbsp milk
  • 100 g powdered sugar
  • 40 g cream cheese

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 2 hours

Cinnamon rolls with a twist – juicy, soft, delicious, even a hit with children

Gently warm the milk on the stovetop or in the microwave; do not allow it to get too hot (max. 37°C), as this will prevent the yeast from fermenting. Stir the yeast into the milk until it is completely dissolved. Let it stand briefly. Meanwhile, in a mixing bowl, combine the flour, sugar, egg, butter, and salt. Add the yeast and milk and mix with the dough hook of a hand mixer or stand mixer until a smooth dough forms. The dough begins to pull away from the sides of the bowl. This will take at least five minutes. Cover the dough (with a lid or a clean, damp kitchen towel) and let it rise in a warm place (by a radiator, on a sunny, draft-free windowsill, in an oven at max. 50°C, or in a bread maker) for at least one hour. Then knead the dough again. Roll out into a rectangle on a floured surface. You can also divide the dough into two parts and work on two at a time; this will make it easier to roll. Melt the butter on the stovetop or in the microwave and then spread it over the dough with a brush. Mix the cinnamon and sugar and sprinkle evenly over the rolled out dough. If you don’t have brown sugar, use white sugar. For those with a sweet tooth, you can add a spoonful more sugar. Lightly grease a loaf pan. Roll out the dough and cut it lengthwise to fit the pan. Place the second piece of dough next to or on top of it. Place the loaf pan on a baking sheet on the middle rack of the oven and bake at 180°C (convection oven) for about 35 minutes. You can also preheat the oven, but this will reduce the baking time by about five minutes. For conventional baking, the baking temperature is 200°C (400°F). The cake should be well browned on top; then it’s done. Remove the cake pan from the oven and let it cool slightly. Remove the cake from the pan and place it on a wire rack. Mix together a frosting of powdered sugar, cream cheese, and 2 tablespoons of milk and spread it over the cooled cake.
