Ingredients for 2 servings:
- 1 cup rice
- 1 cup(s) water
- 2 bell peppers, diced
- 1 small leek(s), in rings
- olive oil
- 1 small can of pizza tomatoes, diced
- 1 small can of lentils
- salt and pepper
- 1 pinch(s) rosemary
- 1 pinch of ginger powder
- 1 pinch(s) cinnamon powder
- 1 shot of vinegar
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Lentils with a difference
Place rice in water and bring to a boil. Sauté peppers and leeks in olive oil. Add pizza tomatoes and sauté while stirring. Add lentils and simmer for about 5-10 minutes. Season with salt and pepper and sprinkle in a pinch each of rosemary, ginger, and cinnamon. Finally, add a dash of vinegar.
