Vegetable soup with dumplings

Ingredients for 4 servings:

  • 500 g potatoes
  • 500 g carrot(s)
  • 250 g beans (green beans)
  • ½ bunch of celery
  • 4 tomatoes
  • 4 tbsp butter
  • 1 liter vegetable broth
  • 3 sausages, coarse, raw
  • 2 tbsp oil
  • salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Peel the potatoes and carrots and dice them. Also dice the beans and celery. Trim and dice the tomatoes. Heat the fat in a saucepan and sauté the celery, beans, carrots, and potatoes. Pour in the broth, bring to a boil, and simmer covered for about 15 minutes. Add the diced tomatoes about 5 minutes before the end of the cooking time and continue to cook. Form the sausage meat into small balls and fry in hot oil until golden brown on all sides. Add to the soup and season with salt and pepper.
