Cauliflower on tomato mince

Ingredients for 4 servings:

  • 1 cauliflower
  • 1 tbsp olive oil
  • 1 onion(s), diced
  • 750 g minced meat, mixed
  • 1 tbsp tomato paste
  • 1 tbsp ajvar
  • 500 g tomatoes, pureed
  • 200 ml cream
  • 100 ml water
  • 1 tbsp, strained broth, instant
  • 1 tsp oregano
  • 150 g Emmental cheese, grated
  • possibly chili flakes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Divide the washed cauliflower into florets and cook until just al dente, then drain. Sauté the onion and minced meat in the oil and season with salt and pepper. Blend the tomato paste, ajvar, passata, cream, water, oregano, and instant broth with a hand blender until smooth and season with salt and pepper. Add the sauce to the minced meat and simmer for a few minutes. Season to taste with salt and pepper (and chili flakes if desired). Place the cauliflower in a greased baking dish and pour the tomato and minced meat sauce over it. Sprinkle with cheese. Bake in a preheated oven at 200°C for about 45 minutes.
