Fruity spinach salad

Ingredients for 2 servings:

  • 125 g young leaf spinach
  • 1 small can/mandarin orange(s)
  • 1 spring onion(s)
  • 4 anchovy fillets in oil
  • salt and pepper
  • 3 tbsp rapeseed oil
  • some balsamic vinegar bianco

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

garnished with anchovies

Wash and dry the spinach, and cut into thin strips. Drain the mandarin oranges, reserving the juice. Peel the spring onions and finely slice them. Mix everything together. Add about 3 tablespoons of mandarin orange juice, the vinegar, and oil, and season. Serve on plates and garnish with anchovy fillets.
