Jostaberries with Icelandic cream cheese

Ingredients for 2 servings:

  • 150 g jostaberries
  • 2 tbsp pine nuts, roasted
  • 350 g Icelandic cream cheese (e.g. Skyr)
  • 35 g cane sugar, brown sugar, or sweetener
  • 4 tbsp lime juice, freshly squeezed
  • some lime zest

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Stir the ingredients for the cream together until smooth and season to taste. Pour into jars, hull and wash the jostaberries, and place them on top. Finally, sprinkle the pine nuts on top.
