Apple Speculoos Cream

Ingredients for 8 servings:

  • 1 pack of apple compote with apple pieces
  • 1 cup raisins
  • 2 cl rum
  • 1 tsp cinnamon
  • 400 g cream cheese
  • 400 g cream
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 10 Spekulatius (spiced speculatius)
  • 1 pack of cream stiffener

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Christmas dessert

Soak the raisins in rum the day before preparation. For the apple mixture, combine the soaked raisins, cinnamon, and apple compote. For the cream, whip the cream slightly with cream stiffener if necessary (not too stiff). Then mix together the cream, cream cheese, vanilla sugar, and sugar. Now layer in a bowl, with the apple mixture on the bottom and the cream on top. Refrigerate the whole thing for at least two hours until ready to serve. Finally, just before serving, finely crumble the spiced speculatius cookies onto the cream. A wonderfully easy-to-prepare dessert, ideal for Christmas and the colder season.
