Savory pumpkin muffins with bacon and cheese

Ingredients for 1 servings:

  • 100 g pumpkin flesh, grated
  • 170 g flour (or wholemeal flour)
  • 2 tsp baking powder
  • 6 tbsp oil
  • 2 eggs
  • 100 ml milk
  • ½ tsp salt
  • 50 g cheese, spicy
  • 50 g bacon, for the lighter version also cooked ham
  • 1 spring onion(s)
  • nutmeg
  • e.g. butter or oil for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

very moist muffins, taste good cold or warm

Mix flour and baking powder with salt and nutmeg. Make a batter with the above ingredients (except cheese and bacon). Fold in the cheese and bacon. Pour into the baking tins and bake at 200°C for about 25 minutes. Delicious hot or cold. Cold muffins can also be easily reheated in the microwave. Tip: If you like, you can sprinkle the muffins with cheese, add curry powder to the batter, replace the milk with coconut milk or buttermilk, or add garlic or herbs.
