Quick banana nut muffins

Ingredients for 1 servings:

  • 225 g butter
  • 3 eggs
  • 225 g sugar
  • 1 packet of vanilla sugar
  • 4 banana(s), ripe
  • 265 g almonds or hazelnuts, ground
  • 300 g flour
  • 1 packet of baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

For 20 moist muffins

Cream the butter, eggs, sugar, and vanilla sugar until fluffy. Mash the bananas and fold in. Then combine the nuts, flour, and baking powder, then mix into the remaining ingredients. Pour the batter into a muffin tin and bake at 180°C (convection oven) for about 20 minutes. This batter is enough for 20 muffins or one loaf pan. However, the baking time will need to be increased for a loaf pan. I bake these delicious muffins every few months; they’re a hit with adults and children alike. If you like, you can decorate them as desired.
