Ingredients for 4 servings:

  • 1 pack of puff pastry, in sheets
  • 100 g ham, juniper ham or hot smoked ham
  • 100 g cheese (Gouda), grated
  • 1 large tomato(s), diced
  • Salt
  • pepper
  • basil
  • 1 egg yolk

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Fillings variable

Cut thawed puff pastry sheets in half to form squares. Then top diagonally with chopped ham, then diced tomatoes and cheese. Season with the spices, but not too hot! Fold the unfilled sides into the middle and press them together (to create little boats or baskets). Brush with egg yolk and top with a little more cheese. Then bake in the oven at 200°C for about 25 minutes. They’re great warm, but they also taste delicious cold and I snatch them out of my hands at every picnic. You can fill the pieces with whatever you have in the fridge. I’ve also tried ham/mushrooms/cheese, ham/peppers/cheese, ham/onions/cheese, ham/cumin, and Hawaiian (ham/pineapple/cheese). These quantities yield 12 pieces, which I estimate to be enough for four people as a snack or buffet addition.
