Chicken and Broccoli Casserole

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 broccoli
  • 400 g tomatoes
  • 4 onions
  • 200 g sugar snap peas
  • 3 tbsp olive oil
  • 20 g butter
  • Salt
  • Pepper, from the mill
  • 150 ml white wine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the meat into strips, trim the broccoli, and cut into small florets. Trim the tomatoes and dice them, and quarter the onions. Trim the snow peas and slice them diagonally into very thin strips. Heat olive oil and butter in a pan and fry the chicken until crispy. Season with salt and pepper. Add the onions and sauté until translucent. Transfer to an ovenproof dish. Mix in the tomatoes, broccoli, and snow peas. Add the wine. Cook for approximately 10 minutes at 180°C (160°C fan/gas mark 3). Stir occasionally.
