Ingredients for 4 servings:

  • 300 g sausage (poultry sausage)
  • 5 cucumber(s) , (pickles)
  • 100 g cherry tomatoes (e.g. red or yellow or mixed)
  • 50 g arugula
  • 1 small onion(s)
  • some salt and pepper
  • 1 pinch(s) of sugar
  • 3 tbsp vinegar
  • 3 tbsp rapeseed oil, sunflower oil or olive oil

Peel the sausage, then slice and then strip. Thinly slice the cucumber. Wash, trim, and quarter the tomatoes. Rinse, trim, spin dry, and chop the arugula. Peel the onion and slice finely. Mix together salt, a pinch of sugar, vinegar, and 2 to 3 tablespoons of water. Whisk in the oil. Mix the salad ingredients with the dressing. Season the salad with salt, pepper, and vinegar, if desired. Ladle into glasses or bowls and serve.
