Urmeli's simple pasta salad 'Ratz-Fatz Schmackofatz'

Ingredients for 4 servings:

  • 250 g pasta (spirelli)
  • 200g Leberkäse or other sausage, leftovers!
  • 3 m.-sized eggs
  • 2 shallots or small onions
  • 1 small garlic clove(s)
  • 1 medium-sized bell pepper(s), green
  • 6 small gherkins
  • 10 cherry tomatoes
  • 3 peaches from the can (optional)
  • 200 g sour cream
  • 50 g mayonnaise
  • 2 tbsp ketchup (curry ketchup), best homemade according to Tim Mälzer
  • 2 tsp mustard (grilled steak mustard)
  • 3 tbsp cucumber juice
  • 2 tsp Worcestershire sauce
  • 1 tsp maple syrup
  • 1 tbsp vinegar (honey vinegar)
  • 1 tsp lemon juice
  • 1 tsp pepper, green, very finely chopped
  • 1 tsp paprika powder, sweet
  • 1 tsp, streaky curry, (fire curry or Thai curry)
  • herbal salt
  • pepper
  • possibly peach juice, from the can

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

good use of leftovers!

Cook the pasta until al dente and let cool slightly. Dice the meatloaf. Hard-boil the eggs, peel, and dice them. Finely dice the onions and garlic, and also dice the bell peppers, cucumbers, tomatoes, and peaches. Combine all ingredients with the pasta in a large bowl and mix well. In a separate bowl, mix the sour cream with the mayonnaise, then gradually add the remaining sauce ingredients, mix well, season to taste, and pour the sauce over the salad ingredients. Mix everything thoroughly, season to taste, and chill. Before serving, season again generously with salt, pepper, curry powder, and paprika if desired.
