Ingredients for 1 servings:

  • 7 eggs
  • 220 g sugar
  • 220 g nuts, grated
  • 2 tbsp rum
  • 70 g breadcrumbs
  • Grease for the tray
  • Flour for the baking sheet
  • 250 g sugar
  • 250 g butter or margarine
  • 2 egg yolks
  • 1 packet of pudding powder (vanilla flavor)
  • 250 ml coffee, boiled, black
  • 40 ladyfingers
  • 100 ml milk
  • 5 tbsp rum
  • 1 tbsp cocoa powder

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Beat the eggs and sugar until fluffy and add the remaining batter ingredients. Spread onto a greased and floured baking sheet and bake at 180°C for about 20 minutes. In the meantime, make a pudding from the coffee and pudding powder and let it cool. For the cream, beat the butter and sugar until fluffy, add the egg yolks, and stir in the cooled pudding a tablespoon at a time. Spread half of the cream over the cooled cake. Dip the sponge cakes in a mixture of milk and rum and place them tightly on the cake. Spread with the remaining cream and finally sprinkle with cocoa powder.
