Baked fish fillet

Ingredients for 4 servings:

  • 4 fish fillets, 125 g each (e.g. tilapia or pangasius)
  • 1 small zucchini
  • 2 tomatoes, fresh
  • 1 can of tomatoes, chopped
  • 1 small onion(s)
  • 1 bunch of basil
  • 1 ball of mozzarella
  • 1 small lemon(s)
  • ½ cup crème fraîche
  • salt and pepper
  • chili powder
  • Paprika powder
  • Vegetable stock, granulated, optional
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

with tomatoes, zucchini and mozzarella

Slice the zucchini into small sticks, slice the tomatoes and mozzarella. Finely chop the onion. Sauté the chopped onion in a little oil. Add the zucchini sticks and sauté. Deglaze with the chopped tomatoes and season with spices. Finely chop the basil and add it. Place the 4 fish fillets next to each other in a baking dish and drizzle with lemon juice. Spread the tomato sauce over the fish and dot with small dollops of crème fraîche. Place 3 tomato slices on each fillet. Scatter over the mozzarella. Place in the oven at 160°C for about 20 minutes. Serve with potatoes or rice.
