Ingredients for 4 servings:
- 600 g chicken fillet(s)
- 200 ml coconut milk, creamy
- 50 ml milk OR:
- 250 ml coconut milk, regular
- 1 ginger, walnut-sized, grated
- 1 chili pepper(s), approx., finely diced
- 1 garlic clove(s), finely chopped
- 1 lime(s), juice and zest
- oil

Grill skewers with a twist
Mix the coconut milk with all the other ingredients and marinate the diced chicken in it for at least 2 hours, preferably overnight. Thread onto (soaked wooden) skewers, dry slightly, brush with neutral oil, and grill on a charcoal grill over direct heat for 7-8 minutes per side. Add salt only after grilling.
