Sweet and spicy marinated tomatoes

Ingredients for 1 servings:

  • 2 tsp sambal oelek
  • ½ slice(s) pineapple from the can, sugared
  • 2 large tomatoes
  • salt and pepper
  • 1 tsp, dried oregano
  • some basil, dried

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

First sweet, then spicy. Perfect for pizza, sandwiches, or bruschetta.

First, separate the seeds from the flesh and set aside. Cut the separated flesh into strips and place in a bowl. Next, finely slice the pineapple and add it. Season with salt, pepper, oregano, and basil, and mix together. Next, add the sambal oelek and mix again. Then, add the reserved seeds and the tomato juice back in. Just enough so that it doesn’t become too runny. Let everything rest, covered, for half an hour, and then use it for pizza, sandwiches, or bruschetta.
