Ingredients for 4 servings:

  • 500 g pasta (spiral)
  • Salt
  • 1 onion(s)
  • 2 stalk(s) leeks
  • 6 tomatoes
  • 1 can kidney beans, 250 g drained weight
  • 1 bunch of parsley
  • 2 tbsp oil
  • pepper
  • 2 tbsp balsamic vinegar
  • 100 g cheese (Emmental), grated

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions, drain. Meanwhile, peel and finely dice the onion. Trim and wash the leek and cut into rings. Wash, trim, and dice the tomatoes. Place the beans in a sieve, rinse, and drain. Slice the sausages. Pick off the parsley leaves and finely chop. Heat oil in a large pan and sauté the onion until translucent. Add the leek, tomatoes, beans, and sausages, and sauté for about 5 minutes. Season with salt, pepper, and vinegar. Fold in the pasta, heat briefly, and season to taste. Mix in the cheese and let it melt. Sprinkle the sausage pan with chopped parsley and serve.
