Wolffish on melted tomatoes with lovage barley

Ingredients for 4 servings:

  • 700 g fish, wolffish (4 pieces)
  • some flour
  • 8 tomatoes (vine tomatoes)
  • olive oil
  • salt and pepper
  • 200 g pearl barley, fine
  • 1 bunch lovage
  • 50 g mountain cheese, strong
  • 50 ml oil (sunflower oil)
  • some chili, ground
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the pearl barley in warm water for 30 minutes, then steam it for 25-30 minutes at 100°C. Blend the lovage, the previously grated mountain cheese, and the oil into a paste using a hand blender. Mix the lovage paste with the pearl barley and season with salt and chili. Season the wolffish and dice the tomatoes. Brown the fish on both sides in olive oil. Add the tomatoes and sauté over low heat. Season the fish and tomatoes with salt and pepper. Serve the wolffish on top of the tomatoes and with the lovage pearl barley.
