Ingredients for 4 servings:
- 8 potatoes
- 2 pointed peppers, red
- ½ cucumber(s)
- ¼ celeriac
- 1 vegetable onion(s)
- 100 g diced ham
- Salt
- pepper
- Marjoram, dried or fresh
- Oil or margarine
- possibly harissa
- possibly cayenne pepper

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
These fried potatoes already contain a side of vegetables, and frying them with the potatoes adds a huge variety of flavor to the meal. Peel/clean the potatoes, bell peppers, cucumber, celery, and onion. Cut everything into cubes. Add fat to a non-stick pan (ideally with a lid). Fry the ham cubes, bell peppers, celery, and onions in the heated fat. Then add the potatoes and cucumbers and fry uncovered. Put the lid on the pan and let it fry until the potatoes and cucumbers are soft. Brown the pan uncovered as desired. Taste briefly before seasoning, as the ham cubes already add some flavor. Add salt, pepper, and marjoram to taste. If you like, you can add a little spice with harissa or cayenne pepper. The fried potatoes go well with fried eggs, aspic, or pickled herring.
